A Melancholic Christmas

I am having a melancholic Christmas this year, trying hard to fight the urge to rush, overwhelm the load and do too much. It is a Christmas that I go through with a sense of loss and hope, both at the same time. It is a period of transition from one place to another and I have little to hold on to that I could claim its mine to keep. Life has a funny twist to it at times, for the greater good, one has to let go of the good and settle for a loss. That is how I feel. I am ok but not feeling great about it. So, I call it a melancholic season, since Christmas is here, it is a melancholic Christmas then. Hopefully, all these will pass sooner than I can remember it, that it will be just a phase in life that I will eventually forget the details and the pain. Hopefully, I will overcome and come out stronger than before. So, there is this little hope lingering on.

There are times, I would like to curve up as a ball and roll into a corner and hide till the season is over. I know that is silly and that will mean I am to miss everything about Christmas and the season. 

What can you do when you feeling and your wishes for the season do not match? How would I know that I would not regret it for being too inactive? Even at this low time, I believe this season of Emmanuel will bring a greater meaning to me if I allow God to work out His timing and not to overthink about it. I think the following keep my sanity intact and keep me seemingly active even though doing much less.

1) Wait a bit, wait on the Lord for this is the season of Advert, time to wait. Listen to His prompting and guidance.The wait can be long, 7 days, 2 weeks or even a month long. I did not succumb to the urge to compete to the first to put up the Christmas Tree and decorations in the house. My original plan was to put them all up before 5 November, before I left for my holidays. I know, its a bit too early. And so we waited for the right moments, to settle few more things in the priority list and we only up the decorations on 13 December! Well, originally, it was supposed to be up on Christmas Eve! And it took us over a long weekend to complete it, waiting for my son to climb the ladder for the taller decorations. It was worth the wait, the decorations still look as stunning, bright and colourful. Christabel has chosen blue as the main colour for the tree. 

2) Doing less is actually doing more. Having less expectation and doing as best that can be. 
Think, rationalise, re-think, re-rationalise the whole schedules and think of ways to make things simpler by doing lesser and shorter list of guests. I think I have to urge to do things big and more is less to me, I mean cooking for 25 and 40 is not that much difference until I start to prepare for double portions and it takes double time to complete all the cooking and chores and I would lay down and mourn the back pain and someone will remind me of my stubbornness to overwork again. I would have no time to wrap up presents and it be too late. So it is a vicious cycle that will go round. 

3) Christmas Devotions, Reflections are important part of the season.
Every year, this is often the least done and most left out item even though it is supposed to be a priority. I have to print them and get myself to read them. Sharing them out is a good way to ensure that I read them. 

4) Go with the flow where it is right thing to do. 
Checking out with families and friends help a lot to see what is the right thing to do. I will have to listen carefully what everyone is doing and wishing to do and adjust accordingly, move some of the guest list to another day just to clear things up a bit more so that I could enjoy them.

5) Expect Emmanual to show up this season. Plan and execute expecting God to show up. Think about the guest list carefully. Invite who you can entertain and be a blessing to them. I am really terrible at this. May the Lord grants me the courage and wisdom to do the needful.

And so, I have a simpler Christmas this year, spending more time reflecting on myself, talking and listening to people that I should pay attention to and be there for them. I think the big change has to be the presents list, I shall devote some time to do that. 

Last but not least, to have a good Christmas, one must have good Christmas Carols to listent to. I miss the Christmas Radio Station this year and found this to be very good. It creates a Christmas atmosphere at my home and a Christmas mood in my heart. May God be glorified in all these, feeble as my heart and soul, He is great in His works and deeds!

Reflections 2017

I am a Christmas person just like a I am night-owl, I mean that later part of the day, later in the year, the ending. I am not so much a New Year person, although I love to have a new diary, new google calendar, love the idea to be able to fill them up with nothing to almost full. I love the idea of starting all over again, a new chance to launch forward. But as much as I love these new beginnings (try saying it as been-gin-ning), I love closure much better!

I love the idea of Christmas Advert that it is countdown time to Christmas and New Year. I love the idea that Christmas and New Year are together, sending off one and welcoming in another year. I love the spirit and air of Christmas, you could feel it in the air. I love the smell of Christmas, not just sweet cinnamon, sweet mince pies, rum aged cakes but that of Roast Turkey, Roast Lamb, Baked Cheese stuff! Definitely, I love Christmas more than New Year. 

Thankfully, there is an advert for Christmas, a countdown and a timely reminder to slow down and celebrate with a bang with loved ones and families. As I age, the celebrations take on different moods and forms, I start to value relationships a lot more. I start to think about what needs to be intentional. I start to care about people over things although things are absolutely essential to maintain relationships like gifts, food, cakes etc. 

Almost every year, I wore myself out preparing for Christmas, there was a season that I did charity fundraising by baking almost a hundred loaves of prune, Chocolate, Christmas Cakes and thousand over tiny cookies. Thankfully, I stop doing this for many years now. Almost every year, on the Christmas Eve, I found myself overworked, overloaded, exhausted and unable to even enjoy the Christmas Eve Service and then I would comfort myself by saying, next year I will prepare earlier so that I do not rush and have enough rest. But then the following will come and go and I would procrastinate too long over Christmas related decisions.

This year is a bit more special as I have entered the second part as a centurion. It is a year of intentional activities. Here are my reflections:-

1. Travel with family 

I got to travel a bit more with family this year, I managed the following trips :-

August - Hainan Island with Michael, Wallace and Malcolm. The two boys went for Summer Camp at the courtesy of China government's invitation to overseas Chinese younger generations. We went back to the ancestral house on the exact date of our 23rd wedding anniversary on 6 August 2017. Bel's star war trooper luggage had a series of exciting adventure of its own.

August - the following weekend after China, we went to Singapore to bring Michael's mum to visit her sister in law, who is Michael's aunt. We met up over Saturday breakfast with most of her family members and took the 4 kids for a try at the iFly Singapore.

In September, I took Wallace to Johor Bahru to register for his Year one at Reading University for Real Estate. I stayed over a short weekend.

End of the year, we are going to Taipei for our new experience of this city.

2. Travel to learn 

In August, I attended the Beijing GIS Conference and it was really eye-opening to see how the China market is doing in GIS. They are into Big Data although not everyone knows how to get Big Data or analyse them properly but nonetheless, its Big Data everywhere.


3. Travel purely for fun

In November, 6-24th, I went away for 18 days. It was a travel with 2 friends at South Island withe Melbourne and Auckland as bonus trips to visit my friends and relatives. This was really a travel purely for fun and relaxation!


4. Staying Healthy

I continue on with my new lifestyle after last year surgery in May, I did one round of major detox diet and that helped to stop the weight piling back on. I was most happy that before my New Zealand Trip and before my birthday, I was told by my doctor that I am doing well and should aim to maintain the weight that way.

5. Celebrations Moments

I was conferred the Kinabalu's Order by the Head of State of Sabah. That came as a big surprise for October. I had no clue this would happen. I receive with gratitude in my heart, what the good Lord grants me with good health to receive and what men are giving me in social status.

6. My mental gardening

This has been shelved for over a year. With two older kids away from home, I ended up busy to manage after them. I was given a mental picture to let go and let God and that God does not have any grandchildren. I have to surrender to Him.

Deep down, I know I have to get back on to this track.

7. My growing up family

Kids are really growing up so fast. At the twinkling of the eyes, they are out of the house. At another blink, the other son has completed his O level exams. Then Bel graduated from Primary School with flying colours.

8. My ABC journey with God

In February, I travelled to Miri with Michael and many others to learn about what is Intentional Discipleship Making. It was a spiritual growth moment. I have been assigned a mentor. Being authentic is hard work; being broken is heart-ache and being courageous means brave enough to let go of certain pride and even people.

9. WOEful people

WOEful team is really scattered this year, most of us are busy and away from KK. Finally, the group has been asked to split up and tried other groups. I do not find this an easy process although I responded obediently swiftly for the greater good of everyone. In the end, myself ended this year without attaching to a group. Seeing them grow, meeting younger Christians will be a good journey for them.

10. Brigade and me

This has been a most painful year for Brigade in terms of heart-aches, no matter what I think its good, there is always someone who think its bad. I cannot reconcile the differences. I cannot reply the accusations. I was asked to learn to be vulnerable through all these. I have no idea what it means and what it will do to the ministry. I know it will hurt it even more but I do not know how to stop it from hurting. May the Lord have mercy on me and my work. May He prosper the work of GB to bless more girls.

Prayer for the Woes in our generation

I copied this from Whatsapp Group Chat and I think it is timley someone should speak up and address this issue from Christians' perspective. In this world, to be silent is deemed as support as you do not oppose it.

SAME SEX MARRIAGE...

This interesting prayer was given in Kansas, USA, at the opening session of their Senate. It
seems prayer still upsets some people.
When Minister Joe Wright was asked to open the new session of the Kansas Senate, everyone was expecting the usual generalities, but this is what they heard:

"Heavenly Father, we come before you today to ask your forgiveness and to seek your direction and guidance. We know Your Word says: "Woe to those who call evil good", but that is exactly what we have done.

We have lost our spiritual equilibrium and reversed our values.
We have ridiculed the absolute truth of Your Word and called it Pluralism.
We have worshipped other gods and called it multiculturalism.
We have endorsed perversion and called it alternative lifestyle.
We have exploited the poor and called it the lottery.
We have rewarded laziness and called it welfare.
We have killed our unborn and called it choice.
We have shot abortionists and called it justifiable.
We have neglected to discipline our children and called it building self-esteem.
We have abused power and called it politics.
We have embezzled public funds and called it essential expenses.
We have insitutionalised bribery and called it sweets of office.
We have coveted our neighbour's possessions and called it ambition.

The response was immediate. A number of legislators walked out during the prayer in protest.
In 6 short weeks, Central Christian Church, where Rev. Wright is pastor, logged more than 5,000 phone calls with only 47 of those calls responding negatively.
The church is now receiving international requests for copies of this prayer from India, Africa and Korea.

With the LORD'S help, may this prayer sweep over our nation and WHOLE-HEARTEDLY become our desire so that we again can be called "ONE NATION UNDER GOD."

Rally Night with Pastor Philip Mantofa

This ☝🏼is what was shared by Pr Philip Mantofa from Surabaya on live streaming yesterday during our Prayer Altar (together on line was SIB Sabah & FGA CYC). His message has really spoken to everyone present and as you listened to the recording; we pray too that the message will also speak deep into your spirit and stir your heart to begin to care for others (nations) like how Jesus cares for us.

A prophetic Word for Malaysia was also released by Pr Philip in Luke 21:20-24 in which he warned: that Malaysia must not miss her lampstand again (the wave of revival); otherwise we will experience another 20 years of silence, stagnation and long wait. Therefore, gather your act, be interested, be involved and be part of this history changing moments. Let's humble ourselves, seek the Lord in earnest prayers and let the Spirit breakout! May Our Nation be healed and be restored to bring glory to the Name of Jesus. Amen.

Ps Philip was urging us to cry in Prayer for Malaysia.

They will fall by the sword and will be taken as prisoners to all the nations. Jerusalem will be trampled on by the Gentiles until the times of the Gentiles are fulfilled.

He gave an example when he came to Malaysia in early year 2000, while he was in the market in KL, he was mysteriously invited to pray and preached in a church impromptu. As he preached people were slain on the floor. He wanted to pray for the receiving of the Lampstand but there were no response because most was already slain by the Spirit. Then he pointed those ushers who were standing to come to the front to receive it in prayer, they too were slain. Then the Holy Spirit told Ps Philip that their time has not come and asked him to leave that place. Until today he don't know who those people are and which church was that. In God's divine appointment, he was connected again to Malaysia through CYC and then SIBKL. And now he believe the time has come.

And the warning thru out Jesus' teachings is clear if we miss His visitation... May we not miss it but hunger for Him!

That time when he first came to Malaysia was 1999. Then he came again two more times. Still Malaysia not ready. The last time he was in Sabah, he said to them he won't go again until an earthquake, and the earthquake came and now he is going to Sabah. The kairos moment for Malaysia is here !!!  🙏🙌🇲🇾🌈

I cannot say the Lord's prayer if I have these within me



The “Our Father”Prayer:

 Do I Really Mean What I Pray?

Mother Teresa of Calcutta once said, “Praying the Our Father and living it will lead us toward saintliness. The Our Father contains everything: God, ourselves, our neighbors….”

Examine how well you live what you pray as you meditate on the following:

I cannot say OUR if I keep my faith only to myself and never share it with others.

I cannot say FATHER if I do not trust in His loving and complete concern for me, forgetting that He always answers prayers how and when He knows is best.

I cannot say WHO ART IN HEAVEN if I am so attached to the ways of this world that I neglect to seek God first in everything.

I cannot say HALLOWED BE THY NAME if I am unwilling to let His holiness penetrate my life and help me grow in my own holiness.

I cannot say THY KINGDOM COME if I am not using my life to bring His love into the world.

I cannot say THY WILL BE DONE if I live by my own ideas of morality or choose to follow the world’s standards.

I cannot say ON EARTH AS IT IS IN HEAVEN if I am not devoting my life to serving Him here on earth.

I cannot say GIVE US THIS DAY OUR DAILY BREAD if I am not willing to be generous with whatever God gives me.

I cannot say FORGIVE US OUR TRESPASSES if I don’t want to put forth enough effort to change.

I cannot say AS WE FORGIVE THOSE WHO TRESPASS AGAINST US if I still hold a grudge, if I’m still angry, or if I still insist that other people change.

I cannot say LEAD US NOT INTO TEMPTATION if I deliberately or knowingly place myself in a position to be tempted.

Cloud Bread

INGREDIENTS

  1. For Plain Cloud Bread:
    • 3 large eggs, divided
    • 1/4 teaspoon cream of tartar
    • 3 tablespoons plain yogurt
  2. For Garlic-Rosemary Cloud Bread:
    • 1/2 teaspoon dried rosemary
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon kosher salt
  3. For Cinnamon-Spiced Cloud Bread:
    • 1 teaspoon honey
    • 1/2 teaspoon ground cinnamon

PREPARATION

    1. Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper. Using an electric mixer on medium-high speed, beat egg whites and cream of tartar in a large bowl until stiff peaks form, about 7 minutes.
    2. For Plain Cloud Bread, mix egg yolks and yogurt in a medium bowl until smooth.
    3. For t Garlic-Rosemary Cloud Bread, mix egg yolks, yogurt, rosemary, garlic powder, and salt in a medium bowl until smooth.
    4. For Cinnamon-Spiced Cloud Bread, mix egg yolks, yogurt, honey, and cinnamon in a medium bowl until smooth.
    5. Add a small portion of egg white mixture to egg yolk mixture and stir just until lightened. Gently fold in remaining egg white mixture in 2 additions until just combined.
    6. Using a large spoon, divide meringue into 6 mounds on prepared baking sheet. Bake bread until golden brown and cooked through, about 35 minutes. Turn off oven and prop open with a wooden spoon until oven is cool, about 45 minutes. Transfer pan to a wire rack and let cool completely, at least 20 minutes.
  1. Do Ahead
    1. Bread can be made 1 month ahead. Store in a single layer in an airtight container and freeze.

Life begins at fifty

This past year and current year, I have been thinking about life after 50, it was easy to think positively about it especially with the internet Google search on reaching 50 years old milestone. Here are some positive ones that have helped to be brave, cheerful about turning 50 last year.

Until now you may have measured life’s worth with bank accounts and salaries, but now you will realise that nothing is more important than family.

I could still remember how I celebrated my 21st birthday in University campus with an English student born same year, month and day as me, I think he is called Mark but we have lost touch since then.

Turning fifty is when you will realize, that life is not a race, it is a wonderful prize. You will start slowing down and begin to cherish, even the quirky moments that once seemed garish. Such is life after fifty – beautiful, captivating and utterly heavenly. Happy birthday.

The Tiramisu Recipe

Tiramisu 


Tiramisu is from Italian and some will say it means "pick me up", "cheer me up" or "lift me up". It is a popular coffee-flavoured Italian custard dessert. It is made of ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavoured with cocoa. The recipe has been adapted into many varieties of cakes and other desserts.

Another story is that it was only created in the 1960's as Recipes Books before that time does not have this mentioned. The first man who made it, a confectioner Roberto Linguanotto, he owned a restuarnat "Le Beccherie" in Treviso where he had his god-daughter, Francesca Valori, working as an apprentice with him. In honour of her culinary skills he named the today world-famous dessert after her maiden name, Francesca Valori-Tiramisu. Ingredients 


30 pieces of Ladyfingers

3 tsp heaped Nescafé coffee
125 ml hot water
125 ml cold water
3 Tbsp Khalaur Coffee Liquor or Tia MARIA

100 gm Cooking Chocolate
100 ml Whipping Cream 

500 gm Mascarpone Cheese
2 Tbsp Castor Sugar (30 gm)
60 ml Rum

300 ml Whipping Cream 
2 Tbsp Castor Sugar (30 gm)
















Ingredients and Assembly Instructions:
30 pieces of Ladyfingers

3 tsp heaped Nescafé coffee
125 ml hot water
125 ml cold water
3 Tbsp Khalaur Coffee Liquor or Tia MARIA
*Chill in fridge beforehand (overnight)

100 gm Cooking Chocolate
100 ml Whipping Cream 
* Melt in double boil, put over fire if become stiff.  

500 gm Mascarpone Cheese
2 Tbsp Castor Sugar (30 gm)
60 ml Rum
Whisk by hand lightly

300 ml Whipping Cream 
2 Tbsp Castor Sugar (30 gm)
* Whisk by electric mixer until stiff
Mix both cream mixture together and keep chilled.

Note :-
1) Sugar supposed to be 100 gm, now reduced to 60 gm. Each Tbsp is 15 gm of sugar.

Assembly instructions:-

1) Quick dip biscuit fingers into coffee liquor, line up as first layer.
2) Spread melted chocolate over biscuit fingers.
3) Spread layer of Mascaporane Cream mixture.
4) Repeat for second and third layer as above.
5) Put in fridge for at least 8 hours or overnight.

Step 1 : Prepare the Coffee Liquor
Step 2 : Melt Cooking Chocolate with Cream
Step 3 : Whip the Cream
Step 4 : Whisk lightly Macarpore Cheese, Rum, Castor Sugar
Step 5 : Dip Ladyfingers with coffee and line them up
Step 6 : Lay them Layer by layer (3 layers)

Zucchini Slices

Zucchini Slices

I heard so much about eating Zucchini for health but this is the first recipe that I realised Zucchini holds up really well inside the Egg Custard or Quiche Filling and it taste really good.

This recipe is a keeper. I put some in the fridge and after 3 days, they still taste good and the combination of Zuchinni and flour gives it some volume and taste great. It is a look-good, taste-good recipe.

Ingredients :- 

5 Eggs Large
150g (1 cup) self-raising flour, sifted
375g Zucchini grated and squeeze out water
1 large onion, finely chopped
100g rindless bacon, chopped
1/2 -1 Cup grated Tasty cheddar cheese
60ml (1/4 cup) vegetable oil
1/2 teaspoon chicken/ mushroom granules powder
Pinch of Salt
Pinch of pepper
*Optional to add 60ml whipping cream or fresh milk to make the mixture harder.

Note:-
Tasty Cheese taste cheesy and can reduce amount to 1 Cup.
Possible to replace Zuchinni with Pumpkin.

Method :-

Step 1
Preheat oven to 170C.
Step 2
Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine.
Step 3
Grease and line a 30 x 20cm lamington pan. Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.              





Verdict :- I shared this first bake with my Connect Group Members and they like it. I would add pinch of salt to make it tastier.
